    I’m an ambitious person. Ever since I was a kid, I’ve always dreamt big in everything I do. When people asked me what I wanted to be when I grew up, I said “the president” just because that was the biggest job I knew. My ambition’s a lot more focused now. And cooking is one of the areas where I’m always trying to push myself. So when the idea of smoking a whole duck popped into my mind, I knew I had to do it. It required me to transform my (roommate’s) grill into a smoker, not an easy feat for someone who’s barely even worked the grill before (embarrassing, I know), but I did it (I used this Simply Recipes tutorial, by the by), and it worked wonderfully. It took about 24 hours total, from brining the duck overnight to letting it slowly cook in a haze of cherrywood smoke, and it was worth it. I like being an ambitious person, even though it means that I’m always aiming for something bigger and better… mainly because it means I’m always aiming for something bigger and better. If you’re like me, maybe this is your next big cooking endeavor. I’m already planning my next one.

  • Maple Bacon Marshmallows

    The moment I laid eyes on the recipe for these marshmallows, I was determined to make them for s’mores as in the linked recipe (look for my version of the s’mores later in the week). Despite my excitement about this particular combination of flavors, this ended up being a particularly divisive recipe, with reactions varying from enthusiastic pleas for a taste to an incredulous “there’s meat in those?” Bacon in marshmallows may indeed seem strange but when it’s candied bacon alongside maple syrup, it actually makes a lot of sense, especially if you (like me) love salty-sweet combinations. If you had the same reaction as me, you already know you want to make this recipe. If you’re on the edge though, not sure if you’re up to something this strange, I’d like to encourage you to take the plunge. Of course, you could also make this recipe and omit the candied bacon; the base marshmallow is surprisingly easy to throw together with very impressive results. Having never had homemade marshmallows prior to this, I was very pleasantly surprised at the great fluffy yet sticky texture and sweet but not cloying flavor, reminiscent of but far superior to the store bought variety.

  • Maple Peanut Butter Energy Bites

    These energy bites are my new favorite snack. A little sweet and packed with protein and fiber, they’re perfect for staving off mid-afternoon hunger pangs (a constant problem for me) and rife with possibilities for customization. Nearly every ingredient here can be swapped out; the peanut butter can be replaced with your favorite nut butter, the ground flax seed can be replaced with more chia seeds and vice versa, any of the dry ingredients can be partly replaced with cocoa powder for a chocolate version, and the maple syrup can be replaced with honey. You can even add in some chocolate chips, chopped dried fruit, or chopped nuts. I think my next batch will use pomegranate molasses (in place of maple syrup), walnut butter (in place of peanut butter), and chopped dates. They’re so easy to make and so convenient to have around that I’m now determined to always have some on hand!

    Maple Apple Crisp

    Lately, I’ve been embracing the fall weather, and one of my favorite fall activities is apple picking. When I came home with a bushel of apples, I knew I had to find some great recipes for them, and this was one of the stand-outs. The combination of apples and maple syrup in this crisp is fantastic, and I loved eating it warm with some yogurt on top (I’ve been enjoying the tartness of yogurt to complement the sweetness of baked goods – but I won’t judge if you use ice cream) and a drizzle of maple syrup. The walnuts help add an extra crunch to the topping and are highly recommended even if you’re not typically a fan of nuts in baked goods. This recipe is especially handy because you can really use any variety of apples (or a mixture of varieties) which is a godsend when you went apple picking and completely forgot which apples were which.

  • Lentil and Sweet Potato Salad

    Up to the last minute, I was debating what to call this salad. The simple “Lentil and Sweet Potato Salad,” the slightly more intriguing “Warm Lentil and Sweet Potato Salad,” or the fully informative “Warm Lentil and Sweet Potato Salad with Maple Vinaigrette.” I ultimately went with simplicity, but I want to make sure to give due credit to all the components that make this salad so very tasty. Served warm (or at room temperature), the flavors here feel very seasonally appropriate for autumn. The maple syrup and mustard harmonize seamlessly in the vinaigrette, playing nicely on top of the lentils’ and sweet potatoes’ earthiness. Something I love about lentils is that they leaving me feeling full but not lethargic which makes this salad work perfectly as a lunch. This would also be a great side along a cut of steak (for the meat-inclined) or some grilled portabella mushrooms.
