    You may take a look at this photo, then at the title of the post, and back, noticing that I left off a crucial ingredient when photographing this salad – the blue cheese. As soon as I sat down to eat it, I knew something wasn’t quite right. Once I added the cheese, the flavors came together perfectly. Umami-laden balsamic-marinated steak, sweet and tart pickled cherries, and tangy blue cheese ensure all your taste buds get involved with each bite. With, of course, a little crispness from cucumbers and crunchiness from walnuts. So imagine that there are pretty blue-veined crumbles scattered atop the salads in the photo, and don’t forget the blue cheese – although you can substitute with goat cheese for a milder take, if you’re not a fan of blue cheese.

    Ever since I first heard of roasting strawberries, I’ve been waiting for a chance to try it out. Since strawberries are starting to show up around here, I tossed a pound of them with balsamic vinegar and threw them in the oven. The result is wonderfully concentrated flavor, perfect for savory or sweet applications. I chose to use them in this savory salad with quinoa. The quinoa is a great foil to the strawberries, absorbing their juices and providing a good base for the salad, along with spinach. Walnuts on top for crunch and blue cheese to balance the sweetness of the strawberries make this salad a winner. It comes together quickly, with the quinoa cooking while the strawberries roast, and I liked it best served at room temperature – perfect for packing for lunch. I think this would also be a great unique addition to a brunch spread.

    I’m starting to miss fall. Winter, I don’t mind skipping – bitter cold and biting wind, all the color sucked out of everything, and root vegetables and leafy greens the only thing in season (and even those shipped from milder climates further south). But fall is pleasantly cool with gorgeously tinted leaves and matching squashes of various shapes and sizes, driving an hour or two to taste crisp apples straight from the tree, and cinnamon-scented everything. I’ve been craving seasonal fall dishes. So I decided, despite the rising temperatures here, to put together this fall salad. Everything was easily available here (except for the radicchio called for in the original recipe which I chose to replace with red cabbage, for color, and arugula, for bite), and the end result has a great mix of flavors and textures. Butternut squash roasted with brown sugar for extra sweetness and ancho chile powder for spice, as well as sweetness from a honey garlic vinaigrette and apple slices, but all balanced by spicy arugula and crisp cabbage, the crunch of pepitas, and the funkiness of blue cheese. Not quite your typical fall salad, but a great remedy for my homesick self.

    I don’t like to show up empty-handed when I go to visit someone. But I don’t always have the time to bake something (my usual go-to since most people have trouble turning down baked goods). I’ve found, however, that not only are homemade dips quite easy to make, but they’re also usually a hit, since they’re so easy to snack on while chatting and relaxing with friends. This blue cheese, walnut, and raisin dip is easier than most to make and tastes amazingly complex, with a great variety of textures and flavors (and, of course, the combination of savory and sweet that I can never resist). I loved eating it with apples, but it also works with pears, crackers, or bread. And I think it could be used as a great spread on steaks, hamburgers, or other sandwiches, too.

  • Cauliflower Blue Cheese Soup

    I’m going to let you in on a secret – most places where people use potatoes, I use cauliflower, and it tastes even better. Cauliflower has lots of edges to get nice and browned when roasting or frying, and it also tastes much sweeter and more flavorful than potatoes to me. Of course, cauliflower is also significantly healthier than potatoes. By contrast to potatoes (the food with the highest correlation to weight gain in a recent longitudinal study), cauliflower is high in vitamin C and fiber and a wonderfully filling and nutritious ingredient. And, really, it tastes delicious. Like in this cauliflower blue cheese soup where it’s pureed with caramelized onions and then mixed with blue cheese and creme fraiche. An easily customizable recipe – use cheddar or gruyere for a more traditional “baked potato” type of soup, or change up the toppings with what you have around. I topped mine with parsley, smoked paprika, and crushed red pepper (I used my usual favorite, Turkish red pepper, but any should do), but crumbled bacon, diced apples or pears, or candied nuts would all also work wonderfully.

    I’ve documented a couple different attempts at recreating restaurant recipes on here. But more frequently, instead of trying to make the exact same dish, I’m simply inspired by my favorite restaurant dishes. Like with this beet, mushroom, and blue cheese salad. See, there’s a place just down the street from me that has an amazing burger topped with beets and blue cheese. So I thought I’d take that combination and make it a salad, subbing in some deeply caramelized mushrooms for the burger itself – I know it might seem blasphemous to some, but I’m not always up for a burger. This salad is surprisingly complex and full of intense flavors, with earthy, sweet, and tangy notes. Something I never could have thought of without some inspiration.

  • Pickled Peach Salad

    My whole life, words have been tangled up with colors and flavors. It took me a while to realize that this isn’t quite the norm – actually, it’s a mild case of synesthesia. Although this doesn’t have a big impact in the day to day, I suspect it’s partly responsible for both why I’m fascinated by language (my full-time job is in computational linguistics) and why I’m fascinated by food. My name (Claire), for instance, is like biting into a perfectly ripe peach – it’s a lovely blending of reds and oranges, and the feeling of pronouncing it is akin to breaking the fuzzy skin of a peach and reaching the sweet, juicy interior. So it’s not surprising that peaches are among my favorite fruits. And while I can easily eat them out of hand, I prefer, as always, to be a bit creative. Here, nearly ripe peaches are pickled and then served over salad greens (I used spicy arugula, another favorite of mine), topped with blue cheese, walnuts, and honey for the perfect combination of flavors and textures. It’s an unusual but visually stunning (and delicious!) preparation. A worthy dish for an ingredient I hold dear.
