  • Balsamic Steak Salad with Pickled Cherries and Blue Cheese

    You may take a look at this photo, then at the title of the post, and back, noticing that I left off a crucial ingredient when photographing this salad – the blue cheese. As soon as I sat down to eat it, I knew something wasn’t quite right. Once I added the cheese, the flavors came together perfectly. Umami-laden balsamic-marinated steak, sweet and tart pickled cherries, and tangy blue cheese ensure all your taste buds get involved with each bite. With, of course, a little crispness from cucumbers and crunchiness from walnuts. So imagine that there are pretty blue-veined crumbles scattered atop the salads in the photo, and don’t forget the blue cheese – although you can substitute with goat cheese for a milder take, if you’re not a fan of blue cheese.

  • Balsamic Pickled Cherries

    Cherries are in season here in South America, and while I’ve been enjoying eating them out of hand (and using them in place of strawberries in my strawberry bourbon lemonade), I wanted to get a little more creative. I’m a big fan of pickled fruit (like peaches), since I find the natural sweetness of fruit is well-complemented by the tartness of vinegar. This recipe caught my eye – although I’d never seen anything pickled with balsamic vinegar before, cherries and balsamic seemed like a perfect match. The result was everything I’d hoped for. An amazing blend of sweet and tart, these cherries are amazing on salads and sandwiches, and I think they’d also make a great addition to a cheese plate. The added benefit to this recipe is the cherry-infused balsamic vinegar – great for salad dressings or drizzling anywhere you’d use balsamic.

    As I go through the different empanada fillings I prepared, I think I may have to declare this one my personal favorite. While they all turned out quite well, I’m always a fan of anything with mushrooms. On top of that, the savory-sweet flavor here from the inclusion of raisins and balsamic vinegar is right up my alley. And it’s really quite an easy preparation, too, for quite a complex resulting flavor. If you’re planning on making smaller empanadas, you may want to dice the mushrooms and shallots instead of slicing them to make it easier to get exactly the right-sized scoop of filling.

    I know brussels sprouts are traditionally a much hated food, but I love them. Like other cabbages (which I also love), I find them best when still crisp (or even raw!). Here, in my favorite preparation for brussels sprouts (and one that I think could convert those who normally aren’t fans), they’re seared in bacon fat, then finished in a balsamic reduction, so while the insides are still crisp, the edges are soft and caramelized, and every bite is imbued with the sweet and tangy flavor of the balsamic. As a bonus, they’re also very quick and easy to make. You can make lots of tasty additions to this basic recipe, including chopped nuts (walnuts, almonds, and hazelnuts would all be good here), grated cheese (parmesan, gruyere, or gouda, to get you started), raisins, or crumbled bacon from the slices you cooked up to get the bacon fat used here, of course.

    Food, I believe, is meant to be shared. Sitting down with family or friends (or ideally both!) over a good meal, home-cooked or otherwise, always fills me with a great feeling of joy and belonging, often reinforced by enthusiastic anecdotes, spirited debates, and unbridled laughter before the end of the meal. This recipe combines my love of good company with my recent love of salads. Perfect for a midsummer get-together, this salad can be thrown together in mere minutes and is easily adapted to the tastes of whoever you happen to be eating with. Use fresh seasonal vegetables from your garden or farmers market, add chicken or steak for extra protein, or make it interactive by inviting everyone to bring their favorite ingredients. By the end of the meal, I hope you’ll feel that lovely glow of an evening well spent.

    I’ve documented a couple different attempts at recreating restaurant recipes on here. But more frequently, instead of trying to make the exact same dish, I’m simply inspired by my favorite restaurant dishes. Like with this beet, mushroom, and blue cheese salad. See, there’s a place just down the street from me that has an amazing burger topped with beets and blue cheese. So I thought I’d take that combination and make it a salad, subbing in some deeply caramelized mushrooms for the burger itself – I know it might seem blasphemous to some, but I’m not always up for a burger. This salad is surprisingly complex and full of intense flavors, with earthy, sweet, and tangy notes. Something I never could have thought of without some inspiration.

  • Tuscan Three Bean Soup

    One of the greatest lessons I’ve ever learned about cooking is to be adaptable. Being able to read a recipe and then adjust it to the ingredients you have on hand and to your taste preferences will help you enjoy cooking more and yield some amazingly delicious results in the kitchen (even if there are a few disasters now and again). Take this soup, for instance. When I set out to cook it, it was intended as a chickpea soup. While I’m normally quite good about gathering all my ingredients before starting to cook (another valuable lesson), I somehow didn’t realize until halfway through cooking this that I didn’t have enough chickpeas. No matter, though, I quickly grabbed a few different cans and changed this to a three bean soup. That kale about to go bad in the fridge? Might as well toss that in too! The end result was hearty, tasty, and, dare I say, probably even better than what I’d have made if I’d had enough chickpeas in the first place!

    Although the ingredient list looks long, they’re mostly basic ingredients that you probably have around (or am I the only one who has a cupboard filled with cans and cans of different varieties of beans?). And if you happen to have a different set of beans in your cupboard, feel free to adapt and use whichever beans you like best (although if you’re looking at a whole lot of black beans, I think you’ll be better off with my chipotle black bean soup). The flavoring in this soup is fairly traditional: mirepoix (onion, carrots, and celery), garlic, thyme, rosemary, and balsamic vinegar to finish it off. You’re going to want a really large pot to hold all of this soup. Great if you’re trying to feed a hungry family (with all the beans in there plus the kale, it’s sure to fill everyone up) or just want to have enough leftovers for a week or two.

    There’s something immensely satisfying about making a lot of adaptations to a recipe and having it turn out exactly as you’d hoped. That was definitely the case with this balsamic barbecue chicken where I took inspiration from my char siu recipe and decided to take a similar approach by using half the sauce to marinate and the other half to baste and serve with the completed dish. This chicken is amazingly flavorful with a good tartness and sweetness to the sauce, and, as I’d hoped, the marinating time helped the chicken to absorb extra flavor and stay moist. The end result would be tasty served alongside roasted vegetables, on a bed of greens, in a sandwich, or on a pizza.

    I was lucky enough to recently receive a nice bottle of grape must as a gift. Having never even heard of this ingredient, I set about doing some research on it (and, of course, taste testing). Grape must, as it turns out, is essentially freshly pressed grape juice before it’s made into wine. Thick and sweet with just a little tartness, the taste is more reminiscent of raisins than your grocery store grape juice. In some countries, grape must is cooked down to form a thick syrup (called saba, pekmez, dibs, or grape molasses), and in fact, I even recall having eaten this before when in Lebanon (as a dessert with a soft mild cheese and whole wheat bread). I’m excited to experiment with my grape must (and will probably be trying my hand at making a small batch of grape molasses to recreate the dessert I had in Lebanon), and this salad was an amazing starting point.

    I like my salads with a good amount of sweetness to them. So here, in addition to grape must, I’ve used blood oranges and candied walnuts to make this salad truly decadent. Having discovered that traditional balsamic vinegar (i.e. “aceto balsamico tradizionale”) is actually fermented and aged grape must, I opted to let the grape must take the place of balsamic. Goat cheese and mixed greens help to balance the dish. The result is fantastic, and I found myself craving more immediately after eating it (and couldn’t keep myself from making it again the next day and then again a few days later).

    Roasted Veggie Pasta with Pomegranate Balsamic Reduction

    Although I often enjoy spending multiple hours preparing elaborate meals, there’s a certain joy in creating a delicious simple meal in just half an hour.  This pasta is perfect for that as the three main components can easily be prepared in parallel, and all of them are fairly straightforward.  I always admire versatility in recipes, and this one is most certainly versatile; use almost any pasta or veggies to customize your meal.
