    Let me warn you; these candied walnuts are addictive. After they’ve cooled, you will eat one to taste test and then inevitably decide you need to taste test about ten or twenty more, just to be sure. You will set them out for guests and then find yourself hovering next to the bowl to snack on them yourself. You will want to find ways to include them in everything you eat, from yogurt to salads to cookies. And you will feel an undeniable urge to make another batch once the first has run out.

    Berbere adds a hint of spiciness to the caramelized coating on these nuts, but you can also use garam masala or a mixture of cinnamon and cayenne pepper if you don’t have the Ethiopian spice mix on hand. On that note, feel free to use almonds, peanuts, pecans, or hazelnuts instead of walnuts here. You have lots of options for customizing this basic recipe, and it’s really hard to go wrong. These candied nuts are perfect for giving away as a gift, bringing to parties for a snack. or, you know, hoarding at home.

  • Pea and Prosciutto Salad

    So I have this problem. If I get hungry and don’t rush to fill my stomach, I start to get grumpy. Very grumpy. Woe be unto those in the near vicinity grumpy. Unfortunately, I also often work late, and with my tendency to make cooking dinner a multiple hour affair, this means that I have far more grumpy evenings than I would like. Since I can only snack on mixed nuts (my usual remedy) for so long, one night I found myself tossing together this quick pea and prosciutto salad to get myself through cooking dinner. The combination of the peas’ crisp fresh flavor with the richness of the prosciutto turned out so delicious that I knew immediately I’d be making it again. I could see this dish being an extraordinary side to roast chicken or steak. Next time I make it, I’m thinking of drizzling some balsamic into the pan when adding the peas and prosciutto for an extra bit of tang.

  • Char Siu Bao

    Char siu bao, or Chinese barbecue pork buns, are my absolute favorite dim sum item. Biting into the soft pillowy dough to reveal the bright sticky pork filling is overwhelmingly satisfying. After an order (usually two buns) quickly disappears, I’m always tempted to get more…and more… So after making my own char siu, I knew I had to go the next step and make these buns. As you can see from the photo, mine didn’t turn out nearly as pretty as the restaurant buns (I haven’t mastered the pleating and pinching to shut the buns), but they were every bit as tasty! Plus this recipe makes a goodly amount – 24 buns. Although that does make it a bit dangerous (I will not be held responsible for any overconsumption). Combine these buns with Chinese broccoli with five-spice sauce, sticky rice, and scallion pancakes, and you can have your very own dim sum!

    I’m beginning to realize how much roasting cauliflower adds to its flavor. The caramelized edges of roasted cauliflower here help to elevate this simple combination with chickpeas, fresh mint, and homemade zaatar. The next time I make this, I think I might mix in a little tahini, or maybe some yogurt, for extra creaminess. This salad makes a great side dish or light lunch and can be served warm, at room temperature, or cold, depending on what you’re pairing it with, the weather, and your mood.

    I’m always looking for lazy side dishes, and these roasted leeks are absolutely perfect. They take very little work, and you can concentrate on the main course while they’re roasting in the oven for about half an hour. The result is tender and slightly caramelized, with a sophisticated flavor from the aromatic herbs de provence. Of course, you can use different spices to switch up this dish and make it the perfect side to whatever your main course may be.

    Although I often go over the top when cooking, sometimes I rein myself in and appreciate the simplicity of combining a few high quality ingredients. Bagna cauda, a traditional Italian dip, is an excellent example of when something simple can yield impressive results. With only four ingredients (and please, use the best quality of these ingredients that you can find), this dip manages to keep you coming back for more. It’s incredibly versatile, going well with bread, fresh vegetables, or even tossed with pasta.

    Chinese Sticky Rice

    Another dim sum favorite of mine, Chinese sticky rice provides a great combination of sweet and savory. This recipe is a perfect recreation of the dish, studded with little bits of tasty mix-ins, including sweet Chinese sausage (with a taste reminiscent of raisins), dried mushrooms, and dried shrimp, which are all essential to the rice’s success. The technique involves sauteeing all the ingredients, including the rice, and then transferring the mix to a steamer – something I was initially skeptical about that ultimately yielded amazing results. Together with some scallion pancakes (which you undoubtedly have waiting in your freezer, right?), you can be well on your way to your own dim sum feast.

    Roasted Tomato Salsa

    It may already be October, but my garden is still producing some last tomatoes, so I used them to make this delicious roasted tomato salsa. Popping the tomatoes (and some of the other components) in the oven adds a nice sweetness to the salsa, and I included both jalapeno and chipotle peppers to give this salsa a good spicy kick. The great thing is how truly easy this salsa is – give some veggies a rough chop, toss them in the oven, and then blend with a few other ingredients. I love having salsa around for adding to sandwiches, putting in burritos or tacos, or having with my eggs in the morning.

    Honey-Glazed Cornbread

    This cornbread is amazing – probably the best cornbread I’ve ever had. The texture is rich and moist without being overly dense, and it has just the right amount of sweetness to it from an ingenious honey glaze that is poured on the hot cornbread immediately after it is taken out of the oven. I ate this with my jerk chicken chili and it was the perfect complement to the chili’s spiciness. Next time, I think I might add some blueberries to the batter.

    Zucchini Fritter Stacks

    I’ve declared this week Zucchini Week. Harvest those last zucchinis in your garden or buy them up at the farmers market and grocery store on sale, and make these delicious recipes! See my Zucchini Chard Gratin from Monday and come back Friday for another zucchini recipe.

    I made these zucchini fritter stacks as a lunchtime meal, but I think they would be amazing as an appetizer or party snack. The fritter itself is crispy with lots of flavor from the zucchini, cheese, and beer. Add tomato and avocado slices on top (and some bacon and extra cheese, of course) and you have a delicious combination of textures and tastes. You can deep-fry the fritters, but I don’t like using that amount of oil (it seems like a waste (although you can filter and save the oil), and the more hot oil there is, the more scared I am of getting burnt), so I use a shallow-fry technique here.
