I cook a lot of one pot meals so I often feel like my recipe collection is lacking in good sides. These Tuscan braised white beans are a simple but versatile dish that would go well alongside lots of different main dishes. The addition of olives and greens adds something a little unusual for a bean dish and helps to keep this side interesting enough to eat on its own as a snack. I kept the spicing simple with herbs de provence, but using fresh rosemary, thyme, and oregano, if you have them on hand, would work equally well, if not better.

After making pulled pork recently, I felt inspired to create a similar recipe using brisket. I love the combination of roasted coffee notes with beef, and I managed to get my hands on some smoked salt which, in addition to the smoked paprika, added great smoky notes. The inclusion of lemon zest is crucial to brightening the flavors (as the intense flavors of the coffee and smoked spices can feel a bit muddied without it). The rub I used here is very simple, but you could experiment with adding more spices; I think I might include cumin and oregano next time or use my chili powder instead of ancho chile powder.

I’m beginning to realize how much roasting cauliflower adds to its flavor. The caramelized edges of roasted cauliflower here help to elevate this simple combination with chickpeas, fresh mint, and homemade zaatar. The next time I make this, I think I might mix in a little tahini, or maybe some yogurt, for extra creaminess. This salad makes a great side dish or light lunch and can be served warm, at room temperature, or cold, depending on what you’re pairing it with, the weather, and your mood.

Breakfast Salad

Inspired by breakfast flavors, this salad is tasty at any time of day. Bacon and eggs are, of course, crucial elements here, where they play quite nicely with bell pepper, pickled jalapeno, and preserved lemon. A warm bacon vinaigrette pulls the whole salad together. This salad can be easily adapted – I think sundried tomatoes would be a great addition (or substitution), as would fresh diced avocado.
