    When I was a kid, I remember feeling annoyed when my parents would proclaim some fresh vegetable to be “as sweet as candy!” It seemed like such a blatant falsehood that I couldn’t believe these people who had so impressed on me the importance of being honest could dare to utter it. But maybe my taste buds have changed because I could’ve sworn this sweet corn I roasted tasted just like candy. Alongside other fresh summer produce – squash, bell peppers, onion, and jalapenos – also roasted until caramelized, it added a wonderfully savory sweet touch to these fajita bowls, rounded out by black beans and chorizo. Of course, you can also grill all the vegetables, if you’d like. Either way, this recipe is perfect for all that overflowing summer produce that’s currently at its peak!

    Usually when I go out to eat, I love sharing. It makes the meal delightfully communal and also means that I get to try a variety of different dishes. But every once in a while, I encounter a dish so spectacularly tasty that I need to have it all to myself. The crispy tilapia with spicy basil sauce at my neighborhood Thai restaurant, Beau Thai, is one such dish. When it first showed up on their rotating specials, my boyfriend and I thought we’d give it a try. We were amazed by the perfectly cooked fish, crunchy fried crust, and fragrant and flavorful sauce. Luckily, it has since been moved onto their regular menu. These days, we’ll stop by for dinner, take a look at their menu (as though we might order something else), and then each get an order of this. So finally I decided I had to try my hand at recreating the dish. I did a simple panko-crusted and fried preparation for the fish itself and modeled the sauce off of my Thai basil stir fry. The end result was like hitting jackpot – now I can get my fill of this dish at home! And maybe I’ll finally try some new dishes the next time I’m at Beau Thai.

    I did something a little blasphemous for the fourth of July this year. I hosted lunch, and I didn’t start up the grill or serve any red meat. It was really hot – the middle of a record-breaking heatwave, as a matter of fact – and I wanted a refreshing seasonal meal. I plucked as many herbs as possible from my garden and served up cucumber mint agua fresca, roasted vegetable quinoa salad, black bean burgers, and this fish (okay, and a little dessert I’ll be posting about on Friday). Nearly any type of fish will work in this simple preparation, packed with flavor from cilantro, scallions, and lime. The resulting dish is definitely refreshing and won’t leave you feeling lethargic on a hot summer day, perfect for my fourth of July meal.

    I’ve been posting about Thai basil all week, and here’s a final recipe honoring one of my favorite herbs. Perfect for the seemingly constant heatwaves that have been hitting DC lately. An amazingly refreshing agua fresca—a little sweet, a little tart, and packed with flavor from the Thai basil. This is one recipe where other varieties of basil can be readily substituted if that’s what you have in abundance. It’s exactly the drink I want to sip on during a hot summer day. Plus, it’s ridiculously simple to make and boasts a vibrant, glowing green color, making it a fantastic option to serve to guests.

    While many people reach for carbonated drinks to cool off, this agua fresca offers a fresher and more natural alternative, free from artificial sweeteners and excessive sugar. Its light and herbal flavor makes it just as refreshing, without the heaviness or bloating that sometimes comes with fizzy beverages.

    For an extra twist, you can experiment by adding sparkling water for a subtle fizz or even mixing it with other fruits like pineapple or watermelon for a tropical touch. Serve it over ice, garnish with a sprig of fresh basil, and enjoy a naturally cooling drink that stands out from the usual summer refreshment options.

    Some days, I feel like I cook so many soups that I should just rename this blog to “Sel et Soupe.” But there’s good reason for my love of soups – they’re quick, easily adaptable, healthy, and delicious. Maybe I’m inspired by my mom, who first started feeling confident in her cooking when she discovered soups. Whatever the reason, here is another soup recipe. I was feeling a little playful and wanted to do a take on refried beans, so I cooked down pinto beans and pink beans (feel free to use just one or the other) and roasted a few bell peppers to add in as well. The result was thick, smoky, and quite tasty, especially when topped with sour cream and cheddar cheese (as pictured) or with a fried egg for a twist on huevos rancheros (my breakfast the day after cooking this). But even served plain, this soup is worth making – and maybe it’ll convince you to love soups, too.

  • Thai Corn Salad

    As we move into summer, I just don’t have the patience to spend a long time next to a hot stove or hot oven to cook. And I certainly don’t feel like eating anything too heavy or rich. So this easy Thai corn salad is perfect for a light lunch or as a side to a lazy summer dinner. A dressing of fresh Thai basil and cilantro along with lime, honey, and ginger perfectly complements the sweet corn that will soon flood our markets and makes this a lot more exciting than your usual corn salad. And since the salad tastes great cold, at room temperature, or even a little warm (and there’s no dairy to spoil), this is the perfect dish to bring along to a picnic. It only takes about fifteen minutes to throw together (or maybe a little bit longer if you use cooked corn rather than raw – I recommend grilling if you’re going to cook the corn), so you’ll still have a lot of time to get out and enjoy yourself.

    I’m constantly looking at new recipes. I keep a list of all the ones I hope to one day cook, and some recipes, I get to in a couple days or weeks. But some recipes linger on the list for months or even years. Recipes that I added even though they seemed complicated, recipes that I keep skipping over because they feel outside my skill range, some even that I’ve tried and failed in the past. My most satisfying cooking moments are always when I manage to successfully tackle one of those recipes (like my char siu bao). This crab and avocado salad has been sitting on my recipes list for three years. Serving a whole avocado, crusted with spices and stuffed with crab salad, seemed beyond my grasp, the technique of getting the crab inside the avocado too confusing, the variety of spices for crusting too extravagant. But recently, I found myself with crab and avocado in my grocery cart, and I knew I had to make this. It all fell together as I put my own twist on the recipe, adding in Asian flavors with soy sauce, sesame oil, and masago, using my own variety of seeds and spices, and just having fun making it. Afterwards, cutting into my creation, I felt an amazing sense of accomplishment. Another recipe conquered.

    Now that it’s spring, I’m weaning myself off of the soups and stews that kept me going all winter. This salad is a perfect match for the transition in seasons. In an homage to all the plants outdoors whose greenery is currently in full swing, this salad is full of green, with asparagus, spring greens, mint, and chives. Quinoa, toasted for maximum nutty flavor, keeps it filling while pomegranate molasses and fresh lime zest and juice add a little tartness and a little sweetness. I love food with a variety of textures, and this salad manages just that – chewy quinoa, crisp-tender asparagus, and crunchy walnuts. This can be served with the quinoa and asparagus still hot or with the whole salad at room temperature or even cold (great for those spring days when the temperature unexpectedly spikes to summer levels) which means it could just as easily be packed for a quick picnic as it could be served as a sophisticated appetizer at a dinner party. Versatile, tasty, and healthy, there’s not really much more I could want this time of year.

    I’ve long loved roasting vegetables, but it’s only recently that I discovered how tasty roasted chickpeas can be. By coating them in spices and roasting, you can easily turn these healthy beans into your new favorite snack. Here, chickpeas are flavored with chili powder and cumin to form the perfect base for vegetarian fajitas. In case you can’t tell from my photo, my favorite part of fajitas is loading them down with toppings. I piled cilantro, lime wedges, salsa, sour cream, cheddar cheese, and diced avocado on mine, but these would even be good without extra toppings. I haven’t tried roasting beans other than chickpeas yet, but I can’t see any reason why this wouldn’t be equally delicious using black or pinto beans.

    We’ve had an exceptionally mild winter in DC this year (which, as someone with a very low tolerance for cold, I’ve actually enjoyed). At the beginning of March, temperatures suddenly shot up in the sixties and seventies, and it’s been feeling like spring ever since. With trees bursting into bloom and tulips out in full force right outside my front door, I just can’t bring myself to keep eating the same hearty soups and stews I’ve been relying on all winter. So when the recipe for this Vietnamese shrimp salad found its way into my inbox, I immediately set about cooking it. Crisp carrot, cucumber, and daikon radish tossed with fresh herbs and a ginger-lime dressing, then topped with shrimp and peanuts makes for the perfect refreshing dish for spring. Most of the work here is with chopping the vegetables and herbs, and once that’s done, the salad comes together really quickly. This made for a great weekend lunch all by itself, but it could also work as an appetizer.
