    Inspired by the coconut breakfast quinoa I recently cooked up, I decided to try a savory preparation using quinoa cooked with coconut milk. I added black beans for extra substance and played off the tropical flavor of the coconut with mango, avocado, fresh mint, and lime juice. The resulting salad was colorful and delicious (not to mention healthy) – perfect for serving my parents for dinner at the end of a hot day of sightseeing.

  • Black Bean and Corn Salad

    On some days, it feels like a burden to cook something, especially something healthy. I want to be creative, to dedicate time to an elaborate recipe, but can’t stand the idea of actually doing so – there are lots of other more important (or just more exciting!) things to do. But we all need to eat, and a tasty dish can be easy as this salad. A fresh mix of black beans, corn, and diced vegetables, pulled together by lime juice and Mexican spices. Even with the chopping, it only takes fifteen minutes or so to throw together. And this recipe is incredibly versatile – serve it as a salad over lettuce (as pictured here), mix it with rice or quinoa for a twist on a burrito bowl, or use it as a side to accompany fish, meat, or grilled vegetables. Make this, and then you can quickly get back to everything else you have to do, with a delicious and healthy meal fueling you!

  • Taco Salad

    Have I mentioned that it’s spring here in Buenos Aires? I’ve always preferred warmer weather, but it’s been a little weird seeing November on the calendar while going through a heatwave – temperatures were up to the mid-90s recently! (That’s Fahrenheit, of course; I still haven’t made the adjustment over to Celsius.) Given the weather, I’ve been eating a lot of salads, but in true Argentine fashion, I just can’t help topping them with meat (like my Thai steak salad) – it’s cheap and good quality here and adds extra protein to the meal. I think this recipe for taco salad could be easily adapted to be vegetarian, however, by omitting the ground beef and adding more beans (a mixture of black and pinto beans would be my suggestion). With or without the beef, this is a salad worth making. With a base of lettuce and cabbage (dressed with a simple red wine vinaigrette), it’s definitely a healthier alternative to the nachos and tacos it resembles, but it doesn’t feel like you’re missing out, especially when you pile on the toppings.

    I love making my own condiments; many, like this salsa verde, are quite easy to whip up, yet still manage to be much more flavorful than their store-bought cousins. Here, all you have to do is a little chopping and a little blending, and suddenly you have something perfect for topping tacos or dipping chips. The avocado is a great twist, too, adding extra creaminess and richness. And, one of my favorite parts of making these sort of things myself, you can easily adjust everything to your taste with minimal extra effort – adding extra jalapenos here, for instance, if you like things spicy, or omitting the jalapeno altogether for a mild take.

    When I was a kid, I remember feeling annoyed when my parents would proclaim some fresh vegetable to be “as sweet as candy!” It seemed like such a blatant falsehood that I couldn’t believe these people who had so impressed on me the importance of being honest could dare to utter it. But maybe my taste buds have changed because I could’ve sworn this sweet corn I roasted tasted just like candy. Alongside other fresh summer produce – squash, bell peppers, onion, and jalapenos – also roasted until caramelized, it added a wonderfully savory sweet touch to these fajita bowls, rounded out by black beans and chorizo. Of course, you can also grill all the vegetables, if you’d like. Either way, this recipe is perfect for all that overflowing summer produce that’s currently at its peak!

    In the recent summer heat that has quickly descended over DC, I’ve been finding it increasingly difficult to convince myself to turn on the stove or oven. The prospect of leaving the house to scrounge up a meal is equally unpleasant. So I’ve been eating a lot of simple food – fresh fruit and vegetables, mostly, that require little to no cooking. This raw kale salad has been a great standby, and after having heard so many others rave about raw kale, I finally understand why. The kale has a pleasantly chewy texture here and is packed with nutrients. Add chickpeas, mixed nuts, and avocados, and you have a salad that not only is amazingly flavorful, but also will make you feel truly good after eating it. This recipe is perfect for adaptation. Use your favorite nut variety instead of mixed nuts, add a little dried fruit, use different beans or a different cheese – it’s really hard to go wrong!

  • Crab and Avocado Salad

    I’m constantly looking at new recipes. I keep a list of all the ones I hope to one day cook, and some recipes, I get to in a couple days or weeks. But some recipes linger on the list for months or even years. Recipes that I added even though they seemed complicated, recipes that I keep skipping over because they feel outside my skill range, some even that I’ve tried and failed in the past. My most satisfying cooking moments are always when I manage to successfully tackle one of those recipes (like my char siu bao). This crab and avocado salad has been sitting on my recipes list for three years. Serving a whole avocado, crusted with spices and stuffed with crab salad, seemed beyond my grasp, the technique of getting the crab inside the avocado too confusing, the variety of spices for crusting too extravagant. But recently, I found myself with crab and avocado in my grocery cart, and I knew I had to make this. It all fell together as I put my own twist on the recipe, adding in Asian flavors with soy sauce, sesame oil, and masago, using my own variety of seeds and spices, and just having fun making it. Afterwards, cutting into my creation, I felt an amazing sense of accomplishment. Another recipe conquered.

    Zucchini Fritter Stacks

    I’ve declared this week Zucchini Week. Harvest those last zucchinis in your garden or buy them up at the farmers market and grocery store on sale, and make these delicious recipes! See my Zucchini Chard Gratin from Monday and come back Friday for another zucchini recipe.

    I made these zucchini fritter stacks as a lunchtime meal, but I think they would be amazing as an appetizer or party snack. The fritter itself is crispy with lots of flavor from the zucchini, cheese, and beer. Add tomato and avocado slices on top (and some bacon and extra cheese, of course) and you have a delicious combination of textures and tastes. You can deep-fry the fritters, but I don’t like using that amount of oil (it seems like a waste (although you can filter and save the oil), and the more hot oil there is, the more scared I am of getting burnt), so I use a shallow-fry technique here.
