I love cooking with new ingredients and have been looking for a recipe using lotus root since I first noticed it at the grocery store. Lotus root has a very subtle, slightly sweet taste and a crunch similar to water chestnuts, even when cooked, and I found that this curry using Sri Lankan curry powder<\/a> is a great complement for it. If you can’t find fresh lotus root, you may be able to find packaged sliced lotus root.<\/span><\/p>\n

\nLotus Root Curry<\/span><\/strong> (adapted from The Well-Seasoned Cook<\/a>)
\nYield: 4 servings<\/span><\/p>\n

\n
1 Tbsp coconut oil<\/span>*<\/li>\n
1\/2 large onion, sliced<\/span><\/li>\n
2 – 3 cloves garlic, minced<\/span><\/li>\n
1\/2″ piece ginger, minced<\/span><\/li>\n
1 – 2 hot peppers, minced<\/span><\/li>\n
1\/2 Tbsp Sri Lankan curry powder<\/a><\/span><\/li>\n
1 sprig curry leaves (6 – 10 leaves)<\/span><\/li>\n
1\/4 tsp turmeric<\/span><\/li>\n
1\/4 tsp paprika<\/span><\/li>\n
1\/4 tsp cayenne pepper<\/span> (optional)<\/li>\n
1\/4 tsp fenugreek seeds<\/span> (optional)<\/li>\n
3 cups thinly sliced lotus root<\/span><\/li>\n
1 cup coconut milk<\/span><\/li>\n
1 can (14 ounces) diced tomatoes<\/span><\/li>\n
salt and pepper, to taste<\/span><\/li>\n<\/ul>\n
*Ghee would also work well here.<\/p>\n
Method:

In a large sautee pan or large pot, heat 1 Tbsp coconut oil<\/em> over medium heat. Sautee 1\/2 large onion, sliced<\/em> until translucent and starting to darken in color, about 15 minutes.<\/li>\n
Add 2 – 3 cloves garlic, minced<\/em>, 1\/2″ piece ginger, minced<\/em>, 1 – 2 hot peppers, minced<\/em>, 1\/2 Tbsp Sri Lankan curry powder<\/a><\/em>, 1 sprig curry leaves (6 – 10 leaves)<\/em>, 1\/4 tsp turmeric<\/em>, 1\/4 tsp paprika<\/em>, 1\/4 tsp cayenne pepper (optional)<\/em>, and 1\/4 tsp fenugreek seeds (optional)<\/em>, and sautee until fragrant, about 30 seconds.<\/li>\n
Add 3 cups thinly sliced lotus root<\/em>, 1 cup coconut milk<\/em>, and 1 can (14 ounces) diced tomatoes<\/em>. Simmer gently for 15 – 20 minutes. The lotus root will retain some crispness when done.<\/li>\n
Serve over rice.<\/li>\n<\/ol>\n
