    It’s weird what foods you miss being away from home. I knew that I’d miss peanut butter and good quality dark chocolate, both difficult to find around here (or expensive once you do find them). But I’d never guessed that I’d start craving kale. It was nowhere to be found in Buenos Aires, and I’ve been really hoping to make a raw kale salad. When I came across some at an organic store here in Montevideo, I was really excited – I know, I know, this is kale we’re talking about, but there’s nothing like satisfying a craving! Sadly, it was too tough to eat raw. So instead I decided to cook it minimally with some white beans and a whole lot of garlic and anchovies. With the addition of almonds, raisins, parmesan, and pickled roasted peppers, this warm salad more than satisfied my craving for chewy, hearty kale. The anchovy flavor is reminiscent of a good Caesar salad, but the kale and white beans make this a lot healthier.

  • Thai Steak Salad

    Recently, I was craving Thai food. Not being so lucky here as I was in DC (where two of the best Thai restaurants in the city were within mere blocks of me), I made the 3-mile trek to what is supposedly one of the best Thai restaurants in Buenos Aires. I was unfortunately disappointed with the food I was served – laab gai with more onions than chicken and a red curry that simply tasted sweet rather than complex and spicy.

    Still yearning for some good Thai food, I turned to my own kitchen and cooked up this Thai steak salad. Surprisingly simple to make, the real key to this salad is the dressing, packed with flavor from fish sauce, lime juice, garlic, chiles, and sugar. The salad itself is extra colorful and flavorful from a mixture of different vegetables, including raw cabbage, one of my salad favorites (I used red cabbage, but any variety should work just fine). Fresh herbs, sliced scallions, and peanuts add even more variety of texture and flavor. And strips of medium-rare steak on top, of course, pull the whole thing together.   • Garam Masala

    I know I post a lot of spice mix recipes, but they’re really an easy way to get the most flavorful food out of your kitchen. The same basic spices (which will stay good for years when stored whole) can be recombined into many distinct mixes. Garam masala is one of my favorites. A staple of North Indian cuisine, the recipes can vary widely from one household to the next, but always involve some “warming” spices (such as cinnamon, cloves, nutmeg, and black pepper). So this is a great mix to adjust exactly to your liking, whether its changing the proportions, omitting some ingredients, or adding others (allspice, star anise, or a couple bay leaves would all fit nicely here); I like mine a little heavy on the cumin and chili peppers. The resulting mix can elevate a simple stew, help to recreate authentic North Indian dishes, or even be added to cookies or hot chocolate for an unusual twist.
