Growing up, I never liked salmon. Coming from a kid who loved lima beans and chicken liver, this probably seems really strange, and I can’t say exactly why I had bad associations with this classic fish. Perhaps I’d had it overcooked or under-seasoned, but whatever the reason for my previous dislike, I’ve since changed my mind. Salmon is a delicious and easy to prepare fish, and this particular method is no exception. The salmon is sprinkled with coriander (which seemed strange to me at first, but I quickly realized the lemony notes are the perfect pairing) and then broiled before being topped with a glaze including bell pepper, mushroom, ginger, and honey.

Lentil Sloppy Joes

I’ve long been a messy eater. When out at a nice restaurant or eating with someone I’m trying to impress, I do my best to keep myself neat. But usually I manage to make a complete fool of myself by staining my white shirt (when will I learn to wear darker colors?) or somehow getting sauce on my nose. So it’s nice sometimes to eat something that’s supposed to be messy. With sloppy right in the name, these lentil sloppy joes give me the perfect excuse for getting food everywhere. I’m feeling strangely suspicious of ground beef these days (although I do still find it hard to resist hamburgers), so I opted to make a vegetarian (vegan even!)

Roasted Pepper and Mushroom Paprikash

Paprikash is a Hungarian stew, usually made with chicken, where the spicing comes entirely from paprika. As a paprika lover, this stew is naturally a favorite of mine. I’ve made a more traditional version using chicken before, but was recently inspired to try out this vegetarian version. The sweetness of roasted peppers and earthiness of cremini mushrooms is a great match with the paprika (I think I’m going to start adding both to my chicken paprikash!), and I tossed in some lentils to make it a little heartier.

Does this stew today look a little extra appealing? That’s because I was lucky enough to be the recipient of a digital SLR camera as a holiday present from my boyfriend and parents (aw, they collaborated!). Hopefully this means I’ll be better able to represent my food from here on out, starting with this hearty stew.

Filling, delicious, and simple to make, this stew is filled with satisfying chunks of mushroom and white beans. I changed up the spicing from the original recipe, opting to go for a hefty dose of smoked paprika (one of my favorite spices) as I find the smoky flavor is a great complement to the fresh parsley.

Chinese Sticky Rice

Another dim sum favorite of mine, Chinese sticky rice provides a great combination of sweet and savory. This recipe is a perfect recreation of the dish, studded with little bits of tasty mix-ins, including sweet Chinese sausage (with a taste reminiscent of raisins), dried mushrooms, and dried shrimp, which are all essential to the rice’s success. The technique involves sauteeing all the ingredients, including the rice, and then transferring the mix to a steamer – something I was initially skeptical about that ultimately yielded amazing results. Together with some scallion pancakes (which you undoubtedly have waiting in your freezer, right?), you can be well on your way to your own dim sum feast.

Thai Red Curry Vegetables

Now that you have some Thai red curry paste (if you didn’t make your own, feel free to use a store-bought version), it’s time to cook a Thai red curry. In this rendition, I used the vegetables I had on hand which happened to be mushrooms, cabbage, and zucchini, but this recipe is incredibly versatile and you can easily use your favorite veggies or chicken – just think about what you’ve liked in past Thai curries you’ve eaten! My curry here doesn’t look too visually appealing (that’s because I didn’t use enough red bell peppers in the curry paste), but the taste is still spot on.

Moo Shu Vegetables

This recipe has a lot going for it: it’s quick (or, at least, quicker than many of the meals I cook), it’s easy, and it’s got some of my favorite vegetables (mushrooms, carrots, and cabbage!). I also love Asian flavors, and the flavors of the ginger, soy sauce, and hoisin sauce here are a great way to showcase the flavors of the veggies. The moo shu pancakes are surprisingly easy to make, even though I was initially suspicious of the technique of rolling out two pancakes together (with oil inbetween) – it worked out perfectly, and I had no problem peeling the pancakes apart after they’d cooked.

Parmesan Mushroom Pasta with Truffle Oil

I’ll admit: simple pasta dishes are my go-to when I’m feeling a bit lazy and uninspired for dinner (for another quick pasta dish, see my Roasted Veggie Pasta with Pomegranate Balsamic Reduction). But there’s no reason why a lazy dinner can’t end up feeling inspired after all, and with a deliciously rich parmesan cream sauce and a dash of truffle oil, this pasta manages to do just that.
