This is probably not shocking to anyone who’s perused this blog, but I can be really ambitious with my cooking projects sometimes. Which is how I found myself in a bind with these graham crackers. I’d committed to making s’mores on an early Saturday afternoon to be the grand finale for the first grill session of the year; I had already invited a couple friends to join and made homemade marshmallows, and I was absolutely determined to make homemade graham crackers for the perfect s’mores. Somehow I easily envisioned myself making the dough on Friday night and baking the crackers on Saturday morning.

Ginger Shiitake Salmon

Growing up, I never liked salmon. Coming from a kid who loved lima beans and chicken liver, this probably seems really strange, and I can’t say exactly why I had bad associations with this classic fish. Perhaps I’d had it overcooked or under-seasoned, but whatever the reason for my previous dislike, I’ve since changed my mind. Salmon is a delicious and easy to prepare fish, and this particular method is no exception. The salmon is sprinkled with coriander (which seemed strange to me at first, but I quickly realized the lemony notes are the perfect pairing) and then broiled before being topped with a glaze including bell pepper, mushroom, ginger, and honey.

Char Siu

Char siu, also known as Chinese barbecued pork, is used in a variety of applications; you’ll find this delicious meat, with its often bright red exterior, on top of ramen, diced in fried rice, as a filling in char siu bao (steamed pork buns), and even served plain, arranged beautifully on a plate. The characteristic red crust is best achieved with the addition of food coloring, but I opted to go without it and still had a gorgeous deep red hue on the outside. I chose to make this using pork shoulder, but for something more decadent, you can use pork belly.

Honey-Glazed Cornbread

Honey-Glazed Cornbread

This cornbread is amazing – probably the best cornbread I’ve ever had. The texture is rich and moist without being overly dense, and it has just the right amount of sweetness to it from an ingenious honey glaze that is poured on the hot cornbread immediately after it is taken out of the oven. I ate this with my jerk chicken chili and it was the perfect complement to the chili’s spiciness. Next time, I think I might add some blueberries to the batter.

Chewy Graham Cookies

Graham Cookies

Reminiscent of the sweet mildly-cinnamon flavor of graham crackers, these graham cookies are a great treat. Using basic ingredients that most bakers will have on hand, they’re a snap to throw together and yet bake up to something a little unusual for when you’re feeling tired of traditional chocolate chip cookies and snickerdoodles (not that both aren’t delicious!). The texture is perfectly chewy, the honey adds a pleasant background flavor, and the cookies are rolled in cinnamon-sugar for a decadent finishing touch. Next time, I’m planning on substituting some of the flour with whole wheat flour for a nuttier taste.
