  • Vietnamese Shrimp Salad

    vietnamese shrimp salad

We’ve had an exceptionally mild winter in DC this year (which, as someone with a very low tolerance for cold, I’ve actually enjoyed). At the beginning of March, temperatures suddenly shot up in the sixties and seventies, and it’s been feeling like spring ever since. With trees bursting into bloom and tulips out in full force right outside my front door, I just can’t bring myself to keep eating the same hearty soups and stews I’ve been relying on all winter. So when the recipe for this Vietnamese shrimp salad found its way into my inbox, I immediately set about cooking it. Crisp carrot, cucumber, and daikon radish tossed with fresh herbs and a ginger-lime dressing, then topped with shrimp and peanuts makes for the perfect refreshing dish for spring. Most of the work here is with chopping the vegetables and herbs, and once that’s done, the salad comes together really quickly. This made for a great weekend lunch all by itself, but it could also work as an appetizer.

I’ve mentioned my love of smoked paprika before, so when I realized that this cajun spice mix was mostly smoked paprika, I knew I had to make it. Besides the paprika, there are a lot of different flavors going on here, including basil, oregano, and a good dose of cayenne pepper, and together they’re the perfect combination for any gumbos, jambalayas, or other cajun dishes you might wish to make. I’ll be posting two recipes of my own using this mix on Wednesday and Friday.

    BLT Panzanella

This simple panzanella (Italian bread salad) mimics the flavors of a BLT nearly perfectly. Old French bread and halved grape tomatoes are seared in bacon fat to add another dimension to this salad, and the subtle addition of basil (easily substituted with other herbs of your choice) give a nice twist. This is a fabulous way to use those last tomatoes lingering on your counter (a friendly message: never store tomatoes in the refrigerator – this causes an irreversible decline in flavor and texture), the tempting heirlooms at the farmer’s market, and the final tomatoes on sale at the grocery store. Enjoy the last tomatoes of the season, before the grocery stores become populated with unnaturally round mushy pink specimens (okay, I’ll admit, I’m a tomato snob).

    Summer Succotash

I love the abundance of fresh high-quality produce that’s available in the summer.  The farmers’ market sets up shop one block from me every Sunday, and I like to spend my morning strolling through, sampling peaches here and heirloom tomatoes there, not to mention cheese from Keswick Creamery, bacon from Truck Patch Farms, and gelato from Dolcezza Gelato.  Yes, I’m very spoiled (from May to November, at least).
