Thai Pumpkin and Salmon Red Curry

Pumpkin and salmon might seem like a strange combination, but all doubts will leave your mind once you taste this curry. I first had this curry at Thai X-ing, an amazing DC restaurant, where it was one of a variety of courses on their set menu. While everything there was delicious, this dish in particular stood out and still comes to mind (I spend a lot of time thinking about food). The tender and sweet pumpkin melts into the spicy, creamy, curry sauce, thickening it, and the salmon adds another dimension of richness. This version captured my memory of the dish well and was far easier than I thought it would be to throw together. The most time-consuming part was chopping up the pumpkin (I think what I got was actually a kabocha squash, and it had a particular thick, knobbly skin) and prepping the salmon (it seems to be the trend around here to leave the bones in the fish when selling it). I’ve been eating this curry for just about every meal since I made it, served over quinoa (though rice will be just as good and more authentic), and I’m already planning for when I can make it again.

Inspired by the coconut breakfast quinoa I recently cooked up, I decided to try a savory preparation using quinoa cooked with coconut milk. I added black beans for extra substance and played off the tropical flavor of the coconut with mango, avocado, fresh mint, and lime juice. The resulting salad was colorful and delicious (not to mention healthy) – perfect for serving my parents for dinner at the end of a hot day of sightseeing.

While I’m still a big proponent of one pot meals, I often feel like I need to round out my repertoire of sides. It can be hard though, since I try not to eat too much rice, bread, or potatoes, foods with notoriously low nutrition values. I love using quinoa in place of rice though, since it’s great for soaking up flavors, but healthier and, in my opinion, tastier. This quinoa is just perfect for serving alongside Mexican food – simple, but tasty with the herbaceous and tart flavors of cilantro and lime a great match to the subtle nuttiness of the quinoa. It can really help complete a meal with grilled fish or meat or with black or pinto beans and is a wonderful base for a burrito (or burrito bowl).

Roasted Corn Salsa

Did you know the best way to keep sweet corn sweet is to store it in the refrigerator? This helps slow down the conversion of the sugars to starches. I only have a small refrigerator here (think slightly larger than one in a dorm room), so I don’t have a lot of space to dedicate to storing corn. But I can’t resisting buying some when it shows up fresh at the market (currently in season here, of course), so I had to think up a quick easy use for the cobs sitting on my refrigerator shelf. I opted for this take on a basic corn salsa, roasting the corn for extra depth of flavor. The rest of the flavors here are pretty traditional (green onion, cilantro, hot pepper, lime), though I did toast the garlic, which I find mellows it perfectly for things like this. This salsa is great as a dip, on tacos, to add a pop of color and flavor to a plate of beans, or as a side for grilled fish or meat.

On some days, it feels like a burden to cook something, especially something healthy. I want to be creative, to dedicate time to an elaborate recipe, but can’t stand the idea of actually doing so – there are lots of other more important (or just more exciting!) things to do. But we all need to eat, and a tasty dish can be easy as this salad. A fresh mix of black beans, corn, and diced vegetables, pulled together by lime juice and Mexican spices. Even with the chopping, it only takes fifteen minutes or so to throw together. And this recipe is incredibly versatile – serve it as a salad over lettuce (as pictured here), mix it with rice or quinoa for a twist on a burrito bowl, or use it as a side to accompany fish, meat, or grilled vegetables. Make this, and then you can quickly get back to everything else you have to do, with a delicious and healthy meal fueling you!

Taco Salad

Have I mentioned that it’s spring here in Buenos Aires? I’ve always preferred warmer weather, but it’s been a little weird seeing November on the calendar while going through a heatwave – temperatures were up to the mid-90s recently! (That’s Fahrenheit, of course; I still haven’t made the adjustment over to Celsius.) Given the weather, I’ve been eating a lot of salads, but in true Argentine fashion, I just can’t help topping them with meat (like my Thai steak salad) – it’s cheap and good quality here and adds extra protein to the meal. I think this recipe for taco salad could be easily adapted to be vegetarian, however, by omitting the ground beef and adding more beans (a mixture of black and pinto beans would be my suggestion). With or without the beef, this is a salad worth making. With a base of lettuce and cabbage (dressed with a simple red wine vinaigrette), it’s definitely a healthier alternative to the nachos and tacos it resembles, but it doesn’t feel like you’re missing out, especially when you pile on the toppings.

Thai Steak Salad

Recently, I was craving Thai food. Not being so lucky here as I was in DC (where two of the best Thai restaurants in the city were within mere blocks of me), I made the 3-mile trek to what is supposedly one of the best Thai restaurant in Buenos Aires. I was unfortunately disappointed with the food I was served – laab gai with more onions than chicken and a red curry that simply tasted sweet rather than complex and spicy. Still yearning for some good Thai food, I turned to my own kitchen and cooked up this Thai steak salad. Surprisingly simple to make, the real key to this salad is the dressing, packed with flavor from fish sauce, lime juice, garlic, chiles, and sugar. The salad itself is extra colorful and flavorful from a mixture of different vegetables, including raw cabbage, one of my salad favorites (I used red cabbage, but any variety should work just fine). Fresh herbs, sliced scallions, and peanuts add even more variety of texture and flavor. And strips of medium-rare steak on top, of course, pull the whole thing together.

Spicy, Citrusy Black Beans

On my first trip to the supermarket in my new neighborhood here in Buenos Aires, I was surprised to see hardly any canned beans – and the small cans that were there (I’m used to stocking up on large 32-ounce cans) were quite expensive. So I decided to make this into an opportunity to try my hand at cooking dried beans. I bought some dried black beans, looked up a promising recipe, and was amazed at how easy it was to cook these up. Admittedly, they took quite a long time to cook (though I suspect they had been sitting in the supermarket bulk bins for some time), so I still have to perfect the process (I may try soaking them for two days next time), but the flavors here are amazing. Enough spice for quite a kick, and the tartness of orange juice, lime juice, and red wine vinegar help round out the flavors. I would have really liked to use chipotle peppers in adobo here, so if you have some, definitely toss one in, and I hadn’t yet found a place with cilantro (luckily, I’ve been able to get my hands on some since cooking this), so there’s no pleasant sprinkle of fresh chopped cilantro on top. But even without those ingredients (as I’ve written the recipe here), these beans were delicious topped with salsa and sour cream and served alongside fried eggs for breakfast. Even plain, they’re fantastic.

After realizing how easy it is to make hummus, I’ve been experimenting with other bean dips, too. They’re quick and simple to prepare, usually a big hit at parties, and great to have around for snacking if you’re like me and sometimes find yourself suddenly hungry and in need of immediate food. This classic black bean dip is packed with Mexican flavors from paprika, cumin, lime juice, and a chipotle pepper. Well-matched with corn chips, but I actually prefer using fresh carrots, bell peppers, and cucumbers for dipping – healthier and, in my opinion, tastier, too.

Avocado Salsa Verde

I love making my own condiments; many, like this salsa verde, are quite easy to whip up, yet still manage to be much more flavorful than their store-bought cousins. Here, all you have to do is a little chopping and a little blending, and suddenly you have something perfect for topping tacos or dipping chips. The avocado is a great twist, too, adding extra creaminess and richness. And, one of my favorite parts of making these sort of things myself, you can easily adjust everything to your taste with minimal extra effort – adding extra jalapenos here, for instance, if you like things spicy, or omitting the jalapeno altogether for a mild take.
